Camille Thiriet is one of Burgundy’s most exciting rising star vigneronnes. Born in Paris, Camille became captivated with perfumes and aromas during her time studying literature, which led her to Burgundy’s winemaking epicenter of Beaune in 2008. Upon spending time with local producers—and discovering her desire to pursue a career in the wine industry—Camille headed to Bordeaux and completed a Master’s Degree in International Wine Trade, ultimately returning to Burgundy to work at Domaine de Bellene and Maison Nicolas Potel. In 2016, Camille and her Canadian winemaker partner, Matt Chittick—who previously held winemaker positions at Domaine de Bellene and Domaine de Villaine—began their small, garagiste-inspired project. The two vinified a miniscule amount of artisanal cuvées from a small amount of vines entirely by hand and foot, without the use of electricity or water. In 2022, the couple fell upon the opportunity to purchase a 4.5-hectare domaine in nearby Corgoloin, which allowed them to significantly ramp up their production. Upon acquiring the property, they immediately began converting all farming from sustainable to organic.
Now eight years into their journey, Camille and Matt maintain the same garagiste spirit that established the foundations of their project from day one. In the cellar, Camille and Matt do not follow a specific set of rules or recipes, but rather vinify everything by sensory intuition. In the cellar, all fermentations are done with native yeasts, and fruit is processed in a small wooden basket press. Reds are vinified with generous amounts of whole clusters, and all wines are produced with minimal sulfur additions. Camille cites fellow winemakers Didier Fornerol and Bernard Noblet (Domaine de la Romanée Conti) as two of her greatest inspirations, as their guidance and friendship have helped shape much of her signature house style as a first-generation winemaker.
